WHY do we live so far apart! I really want to do this. I loved the pizza when we were over there! Will you be posting some of the info you share on your blog? Do you usually use 00 flour?

Love making pizza. Just tried the method in the new Bon Appetit, letting the dough rise again after it goes in the pan. Oh my. Amazing crust. Wish I lived closer. Hope to see photos from your class.

I wish you would post really good pizza sauce recipe!.. I keep making different ones, but I can haven't been able to get the taste I am looking for. Like from a really good Italian restaurant that makes the good pastas and pizzas! Thanks for sharing one, I hope!

From The Italian Dish:

Donna: Believe it or not, the best pizza sauce (and what is used in Naples by pizza makers there) is simply crushed San Marzano tomatoes. This is what we use at home. They have a very rich taste because of where they are grown in that region. I actually buy Cento Passata, which is San Marzano tomatoes, pureed. Or you can buy canned San Marzanos (make sure they are from Italy) and just puree them yourself. Hope this helps! If you can't find Cento Passata where you live, I do have it in my Amazon Store. Just click the link under my site's banner that says "Shop" and then click on "Essential Pantry Items" in the store. Here is the link: http://astore.amazon.com/theitadis-20/detail/B001SAWKSQ
